From the Dietitian’s Kitchen: Sweet Potato Mash

Thanksgiving is almost here, and I have the perfect side dish to add to your menu: sweet potato mash. Instead of heavy cream, this recipe calls for coconut-flavored yogurt. I like to use Siggi’s yogurt because it is high in protein, all natural, and low in added sugar. Also, this yogurt is thicker than other kinds so it is just right for mashed potatoes.

4-5 large sweet potatoes
2 Tbs butter
1 Tbs chives, chopped
1/4 cup of 2% milk
1 cup (5.3oz) Siggi’s coconut yogurt
salt and pepper to taste

Directions

  1. Scrub the sweet potatoes and rinse with cold water. Peel with a vegetable peeler and then cut into cubes.
  2. Boil in salted water for about 10 to 12 minutes or until soft.
  3. Drain cooked sweet potatoes.
  4. Add butter, chives, milk and yogurt. Mash until well combined.
  5. Add salt and pepper to taste. Garnish with additional chives if desired.
