Go Green: Shamrock Shake Copy Cat

In celebration of National Nutrition Month and Saint Patrick’s Day, I have developed a sweet, green and minty treat that is incredibly easy to make… and even easier to slurp down. While most shakes and smoothies (like McDonald’s famous Shamrock Shake) can break the bank — of calories, fat and carbohydrates that is — I made sure to make this minty green one with more nutritious ingredients, making the indulgence one you don’t have to feel guilty about!

Vanilla Mint Green Shake

Total Time 10 minutes

Yield 16 ounces (1-2 servings)

Ingredients

  • 1 cup Fresh Spinach
  • ¾ cup Original Soy Milk (Unflavored)
  • ½ cup Vanilla Greek Frozen Yogurt
  • 6 ounces (1 container) Plain Non-Fat Greek Yogurt
  • ¼ teaspoon Mint Extract (Not Peppermint)
  • A splash of Vanilla Extract

Use ingredients you have on hand such a low-fat or skim cow’s milk, regular plain or vanilla yogurt, low-fat ice cream, frozen spinach, fresh mint leaves, kiwi, avocado, chia seeds, etc! If you make changes, just remember it will change the nutritional composition listed below.

Directions

– Simply measure and add all of the ingredients listed above into a blender (or food processor).

– Pulse until everything looks combined.

– Give it a taste. If it is too thin for your liking, consider adding a few ice cubes (milk ones if you’re thinking in advance) or simply place in the freezer for a few minutes.

– Done! Pour into 1 or two glasses for serving.
